Bavarian cream with white chocolate and lime, raspberry ice-cream and fresh fruit salad with drops of Olitalia - glaze with "Aceto Balsamico di Modena I.G.P."

Recipe for: 4 people


For the bavarian cream with white chocolate and lime:
250 g whole milk
3 egg yolks
80 g white chocolate
80 g sugar
3 sheets gelatine
200 g whipped cream
Zest of half a lime

For the raspberry ice-cream:
300 g fresh raspberry puree
60 g glucose

For the garnish:
Seasonal fruits as preferred
Small forest fruits
OLITALIA - Glaze with "Aceto Balsamico di Modena I.G.P."


For the Bavarian cream with white chocolate and lime:

  1. Prepare a custard with the whole milk, egg yolks, sugar and lime zest.
  2. Leave to cool. Melt the chocolate using the “bagno maria” method, and soak the gelatine in water. Add the chocolate and gelatine to the custard.
  3. When the mixture is cold, add the whipped cream and place in moulds then leave in the fridge for roughly 3 hours.

For the raspberry ice-cream:

  1. Mix the raspberry puree with the glucose and place in the ice-cream maker and cream.

For the garnish:

  1. Chop the fresh fruit into small chunks.

Assembling the dish:
Turn out the Bavarian cream onto the plate; garnish with the fruit and place a small scoop of raspberry ice-cream on top. Finally, decorate the plate with drops of OLITALIA - Glaze with "Aceto Balsamico di Modena I.G.P."
